Abstract
The environment starts shaping the human immune system even before the umbilical cord is cut. The composition of the human microbiome is influenced by exposure during delivery, early nutrition like breast- or formula feeding as well as timing and nature of solid food protein introduction. The default reaction to ingested food proteins is development of oral tolerance. However, because of the influence of genetics and environmental factors, the phenomenon of oral tolerance can be breeched and food allergy may develop.Research is focusing on environmental factors and the role of food proteins to guide recommendations regarding management and prevention.
